Recently, I was visiting my nephew in London. He is a 20 year-old student of mechanical engineering and he asked if I would show him how to make roti.。After all, he grew up enjoying his Punjabi-speaking grandma’s cuisine. His English mum has shown zero interest in making Indian-style cuisine (or for that matter, learning about her husband and his family’s religion, language, music, history or literature) but thankfully, it was convenient to send her two younger kids to their Asian grandparents after school.。So, for all of their primary and secondary school years, just about every day after school, Roshan and his younger brother would have their after-school meal at their grandma’s house.。And central to every meal for those from the Punjab region of India- Pakistan, is eating the freshly made roti, made from wholemeal flour and water.。Ahhhh… that fragrance of freshly made rotis cooked on a metal griddle we call the thava, is now awakening my tastebuds and innumerable memories of home life at the centre of which is what else, but the kitchen?
